Rainbow Checkered Cake

Usually for small parties, such as a child's birthday, it can be fun to bake your own cake. Cake making today is extremely simple, and all it takes is buying a box of cake mix then following the instructions on the label. But let us think outside the "Box" for a moment, and feed our ego by turning that plain old cake into a work of art.

The Rainbow Checker Board Cake is the brain child of Elise Strachen, who runs a very popular Youtube channel titled "My Cupcake Addiction". Elise took an interest in baking by attending numerous baking courses which led to her launching a cupcake business. She now shares her expertise with millions of subscribers on her Youtube Channel, and they gladly devour every morsel of her tutorials.

On the outside, the Rainbow Checker Board Cake looks very unassuming, but when split open it reveals an amazing cornucopia of colors. So let's start baking.

Butter Cream Frosting

Tools

  • Mixer
  • Spatula

Ingredients

  • 5 Cups of Soft Mixture Icing
  • 250 grams  of salt-reduced butter
  • 2 teaspoons of vanilla extract
  • 3 tablespoons of full cream milk

Instructions

  1. Blend butter for 5 minutes until it is light and fluffy
  2. Slowly blend in the soft icing mixture until fully mixed in
  3. While blending, add vanilla extract until absorbed
  4. Add the cream milk until fully absorbed
  5. While blending scrape any risidual soft icing mixture into the frosting

Rainbow Checker Board Cake

Tools

  • 6 small bowls
  • 2 circle cutters of different sizes that are smaller than the layer pan
  • Serrated edge knife
  • Offset spatula
  • Spoons
  • Butter Knife
  • Several 6 inch layer pans
  • Cake board for presentations
  • Zip lock bags
  • Wire rack
  • Mixer

Ingredients

  • Butter Cream Frosting
  • 2 packet cake mixes
  • Eggs
  • Milk
  • 6 bottles of food coloring
  • Non stick spray

Instructions

  1. Add the packet mix into the bowl, and any other ingredients that the label instructs (Typically Eggs and Milk)
  2. Thoroughly Mix the cake batter
  3. Add equal amounts of cake batter into 6 bowls
  4. Place the batter in each bowls into zip lock bags
  5. Cut a hole in the corner of the zip lock bags, then squeeze the batter into the layer pan in a spiral motion
  6. Flatten the batter with the back of the spoon
  7. Bake each layer as instructed by the packet mix label
  8. Once finished, cool each cake layer on a wire rack.
  9. Place the cooled cake layers into the freezer for 1 hour to make them firm
  10. Cut the tops of the layers with the serrated knife until they are all flat
  11. Flip the layers upside down then scrape off the burn marks with the knife
  12. Cut the edges of each layers until they are perfect cylinders, and aligned to each other
  13. Use the circle cutters to cut out two inner circles from each layer
  14. Add frosting to the edges of the hollow circles
  15. Once done alternate the circle colors into the hollow holes of each layer
  16. Take the presentation board and spread some frosting onto it so that the cake layers will stick when stacked on top
  17. Spread a thin layer of frosting between each layer that you stack
  18. Use the offset spatula to spread an initial thin layer all around the cake until covered.
  19. Put in freezer for 15 minutes to harden
  20. Spread another thicker layer of frosting all around the cake
  21. Use a ruler to smooth the cake out
